I have to respectfully disagree. It's commonly accepted that brass is not a problem, especially if you "pickle" it per John Palmer's instructions. He is a metallurgist by trade, longtime homebrewer, and author of course. He says that the small amount of lead in brass does not pose a health risk...

Ah good point, I totally missed that. I haven't tested the head yet. The flow rate seems fine. The kitchen sink faucet can't keep up with it @ the same level. I'll check out how high I can push it tomorrow and post my results.

My guess is a porter or a stout. Head to your nearest "fancy beer store" and buy a few different bottles of both styles. That would be a great place to start.

It's not cheddar but Sharp Pinconning cheese is one of the best cheeses I've ever had. I think it's an odd type of Colby actually. The mild is great as well. The real trick is finding it if you're not in the Midwest.
