100% Brett (ecy34 dirty dozen) golden ale

Ok I'll just update through the whole process for anyone looking in the future- I decided to go with Zythos with 0.7oz at 60, 0.8oz at 15, and 0.5oz at 5. Later on I'll taste it and see if I want to dry hop pending if it's more fruity (then probably dry hop) or barnyardy (probably not dry hop)...

100% Brett (ecy34 dirty dozen) golden ale

I've done a lot of looking into 100% primary with brett dirty dozen and haven't seen a ton so I'll document brewing this and how it turns out. Going to brew Sunday, have a 1.5L starter going with dirty dozen dated 1/31/16, also tossed in some dregs from smuttynose smut labs daily brett. I got a...

Wood-Aged Beer StoneHedge, Oak Aged IPA (5-Gallon AG)

Just put this in the keg for carbonating - aged in a new oak barrel (it was 2nd beer in there) for 2 weeks and the oak comes through slightly which is nice Overall the hops give a bit of a strong fruit-loop aroma/taste which is actually pretty good, bitterness is not harsh at all - very smooth...

Wood-Aged Beer StoneHedge, Oak Aged IPA (5-Gallon AG)

Just got a new oak barrel, going to do a Scottish ale then a porter and then this IPA in there - has anyone tried it in a barrel or just with chips? Probably going to use san Diego yeast

Cold crash starter at high krausen?

Thanks for input - just pitched it I decided to try cold crash while it still had a good krausen on it last night and then pulled it out when I started the brew this morning Well...wouldn't you know by the time I got around to decanting it had picked back up again pretty quickly and I was...

Cold crash starter at high krausen?

I've read a ton of debate between pitching a starter at high krausen or letting it finish out then cold crashing the night before or whenever and decanting. I'm wondering - because I am using the Brulosophy method of yeast harvesting which I'll do and crash tonight and pitch it tomorrow - my...

Temp drop from HLT to MT - difficulty with mash temps

Thanks for input! That's great idea to get it all in there a little high and then wait for it to drop down to my strike temp - also like the floating thermometer. Have certainly been tempted with the screw it I'm building a RIMS...

Temp drop from HLT to MT - difficulty with mash temps

I imagine this will just end up being a trial/error solution, but I thought I'd see if anyone had some thoughts/intel on this issue. I just recently put together a cooler HLT with a controller electric heater (love it btw, highly suggested!) Generally I heat the water up around 163-168...

    Raspberry Honey Wheat

Just to update, I bottled yesterday - the FG was 1.009 (beersmith was right on). The raspberry flavor was pretty strong still, hoping it will keep mellowing out in the bottle. We'll see if these are carbed up and ready by xmas. If the raspberry stays too strong I have a chocolate stout I just...

    Raspberry Honey Wheat

Well for those who come across this in the futuree -> took a tasting/reading today (Wednesday, pitched last Friday) and it's at 1.014 and has an unreal reddish color to it. The taste is good right now, the raspberry aroma/taste is too much at this point though, I'm thinking those will diminish...

    Raspberry Honey Wheat

One other note, this is my first time using honey and getting it figured in beersmith was a bit of a challenge. I mostly just wanted to figure out if I was hitting numbers correctly, etc. so I took honey out of the recipe as my 'og' and then added it back in for the og for calculating abv...

Dry hopping cider that will sit for 6 months

I'm pitching a cider tomorrow with Wyeast 3711 and plan on leaving it for 5-6 months. I'd like to give dry hopping a shot as well, any recommendations on when to do that dry hopping? Right after fermentation ends for a few days or right towards the end of letting it sit, close to bottling?
