    LMGTFY: For ale production, the fermentation temperature is usually 65° to 70° F, so temperature modification is not necessary. But the fermentation should still be “rested” at this temperature for two days to ensure proper diacetyl reduction.

    What to do with 3oz of Amarillo Hops

    Personally, I'd say use a cheaper hop maybe .3oz or so at 60min, then add in 1.5oz of Amarillo at 20min, and another 1.5oz in at 5minutes. Dryhop with 2oz of Citra and enjoy.

    20. Hands down, no questions, don't even bother with 15'ers. I have 15 gallon kettles, assuming I'd do 10 and 5 gallon batches... Not worth it, get the larger kettles and save yourself money and hassle down the road. =)

    Damn flaked corn!!

    +100 on rice hulls. Stuck my first batch something fierce with corn and oats. Since then I toss a big handful of rice hulls in my batches using those ingredients and I've had zero problems! Best of luck on that next batch.

    Is it illegal to brew beer in a hotel room...

    Might wait to pitch the yeast until you get it to the hotel? That way you can seal the bucket up for the 2 day car ride, and don't have to worry about trying to control the temps in the trunk or wherever.... Also, less chance of making a mess if it does start going crazy.
