    This is great! Thanks for all the info. Even after adding DAP and a little more yeast, it just didn't want to go. I will dump it this weekend and get some Omega stuffs. Third time's the charm, right?

    I did add nutrient early on, but not DAP. I'll have to give that a try. Nothing to lose. It was drain bound anyway.

    Welp. This was a bust. It's sitting here so many weeks later and has stalled at 1.025. I tried adding some US-05 to kick it into gear, but it just won't budge. Not sure what went wrong, but I'm gonna dump it and give it one more go.

    Yes. Tons of experience with this. After carbing to ~1.5 volumes, I serve Old Specked Hen at 35 psi using beer gas through a stout faucet. At times I will serve with normy CO2 at normy pressure, but it's not quite as good.

    Grain mill problem.

    I have that exact (or similar) mill will the same triangular gaps, sans the slipping through problem. The rollers are positioned in such a way that it should deter grains from going opposite the rotation. Are you milling too fast/slow? If you're hand cranking, are you maybe sending it backwards...

    When you say there's no ring to pull up, does that mean it never had a ring and cannot be manually relieved? If so, I would get a new lid just to have this option.     I've always like Mangrove Jack's M02 cider yeast for cider. If it's not available, I find EC-1118 is good for anything that's not beer.

    Very grey. I don't know what is going on with it, scientifically, but I haven't had good luck when they start to turn color from beige/brown. I have been able to save a couple by going beneath the grey layer.

    Should be fine if there's no grey in the yeast. That said - I've had it work that old without a starter. I've also had one fail that was younger. I would make a starter for it and/or have a back-up yeast in case it doesn't take off.
