    Amazing action, that's for sure.... This is actually only 8hrs after pitching... Headspace... I woke up this morning to krausen on the ceiling! So I thought I could just take the cap/airlock off and put another on. It just kept foaming over like a volcano... Nonstop. Had to get to work...

    I bought a 1lb bag of wheat DME and a 1lb bag of pilsner DME then measured out 12oz of each using a digital scale.

    I've never really heard of calibrating a hydrometer... But I think it's factory calibrated for 68. I did draw off a sample from the jug.

    Thanks for your help and encouragement! The Oktoberfest has mellowed out and it's great! Broke open an Irish stout a few days early and have nothing to complain about except the carbonation is a little on the low end.

    I started brewing about 2 months ago and have had 2 very successful brews. 3rd is in primary and should be amazing! I thought 15 gallons would last me through the winter but this stuff goes down fast! I am in South Dakota and winter came early... I doubt we'll see above freezing temperatures...
