    Coffee beans or coffee malt for coffee flavor?

    Whether to Secondary Ferment or Not?

    The only secondary I would consider is long term aging in barrels or something like that. Under normal circumstances, the keg essentially functions as a secondary fermenter.

    I just bought a bunch of plain, single-color kitchen dish towels from Walmart. Cheap and they don't match our "fancy" kitchen towels, so I know they're for the brewing room. They go in with my regular laundry after a brew day.

    How to hang immersion chiller in a kettle so it doesn't rest on anything?

    What is your cutoff time of day to start brewing?

    8am cutoff, typically. Usually I start at 6am and I'm wrapping up around 9:30am at the latest. If I start after 8 I won't be done until lunch or later.

    Brew smaller batches. You should have no problem with 2-3 gallon all-grain batches on just about any stove top.

    Storage of washed yeast

    I've always used pint mason jars with the white plastic reusable lids. Some of my yeast has sat in the keezer for 6 months, and kicked right back up with a fresh starter. I just make sure to keep everything well sanitized, and keep the harvested yeast cold.

    I had a few really rough smelling starters with A38 Juice from Imperial (London Ale III) but went with it anyway and the beers turned out great. Some yeasts just make for interesting starters.

    Favorite part of brew day?

    Mashing in, just as my pot of coffee is ready. From there on out it's easy work, measurements and numbers. Usually around 6:30am at that point.
