    Revvy, I am bottling cider that has fermentation still active. I am assuming I need to check them on day 3-5 in order to check carbonation before pasteurizing so I do not have bottle bombs.

    I am doing a 1 gallon batch to test out the pasteurization technique. I am taking it down to about 1.012ish, priming, and then bottling. Since it will only yield about 10 bottles, I am curious at what point should I start to check the carbonation? Bottles will be sitting in a tupperware...

    You sure the OG reading was correct? perhaps you didn't have it mixed up well enough?

    That would put it at 2.9%. As stated, I would be concerned on whether it was truly done fermenting.

    Yes, but be careful with xylitol. Some have reported that it give you the runs. A quick google search confirms this.

    Both examples are correct. Notingham should ferment down to around 1.000

    Roger that... I will pasteurize using the turkey fryer on the patio while wearing my 4 wheeler helmet, goggles, leather gloves, and leather jacket. :D

    Only doing a 1 gallon test batch. Am I correct that after carbing it up, I can just place it in the fridge if I am still a little intimidated to try the pasteurization? Sorry for all the questions but all I have ever done before is back sweeten with unfermentables so this is uncharted...

    You sure there is no yeast? Usually the purpose of a kit is having everything needed in the box.
