    Sounds like a fantastic beer! The recipe seemed to have changed quite a bit, did you ever end up settling on a favourite batch? Did the different yeast contribute anything nice?

    I brewed this on Saturday. Mashed at 147 for almost two hours and added 8% sugar near the end of the boil. It has been bubbling away and smells great. I went with the Motueka version. As a hop head, it's a little difficult to fight the urge to dry hop...maybe the next time around.

    Tart finish from cold-fermented 3711

    I'm curious about fermenting 3711 on the cold side too. I'm wondering if it's possible to get a dry beer, with muted saison character, while keeping that great mouthfeel.

    Yup, it is a lot of dark malt! It smells and actually tastes pretty nice, but it's just a little sweeter than I'd like and the body is a little heavy. Normally I'd just leave it alone, but the last stout I made was a sweet stout, so I wanted to try something less sweet this time.

    I haven't read through very much of this thread yet, but would you change the hops if you were going to use Simply Grapefruit? Maybe something that compliments grapefruit a little more? The original hops for this recipe seem like they would compliment Simply Limeade more.

    Thanks for the suggestions guys. It's bubbling away right now, just added a blowoff because it's getting dangerously close to the top of the carboy. I'll take a sample in a few weeks, if it's too sweet (for me), I'll look into adding some coffee.

    My OG was 1.069 and I pitched 1.75 packs of US-05 (rehydrated). My FG=1.012. I'm still a newb, but I'd shoot for 1.5 packs to be safe (Mr. Malty recommended 1.3 packs). Note: I made extract and it was a 5.5 gallon batch.

    I've had this one in the fermenter for nine days now. Just stole a little sample. It is awesome! I'm almost reluctant to dry hop because it already tastes amazing. SG= 1.012, I'm sitting at about 7.6% ABV but I wouldn't have even noticed it's that strong because the flavour is so nice.

    This beer turned out great. Everyone loves it. I used zest from 2 navel oranges, 1 tangelo and 1 lemon. The orange aroma at bottling time was very strong, but died down to the perfect level after bottle conditioning. I'm thinking of brewing this again next week but incorporating grapefruit zest.
