Can anyone recommend a thermometer I can use to check temps in my basement. I would like one that records the min temp and max temp so I know the range in the area.

LOL, the traditional way would be to pull your starter from the fermenter of the last brew.

For controlling fermentation temp you can buy their short stand for it. That way it will sit upright in the fridge. I want one but I'm not exactly sure what I would gain by using one. It a really cool tool thought.

If you've never mad the kit before, and want to serve it to people you like, I would seriously make it now and then re-make it later if you like it. All the more so if this is an occasional thing and you aren't 100% sure it will turn out as you expect.

It won't bet "too bitter because you will have a greater concentration of malt as well as hops. You might have a stronger flavor than you might want but it should still balance out. It all depends on you OG and if you hit the target there though.
