    Pitching yeast for high gravity beer

    Wait, are you asking if you should make a starter for bottling? Even for a higher alcohol beer just rehydrating about 1/2 a packet of dry yeast should be enough for bottling.

    Brewpub refused to fill my growler.

    It's called Sixteen Tons, about two blocks south of the Stein. The Stein has a much bigger bottle selection but if you want to have a pint or fill a growler or jar, Sixteen Tons is a nice place to hit up.

    NB Surly Cynic Ale Extract Kit

    I just racked it to secondary on Friday so I could use the yeast in a Strong Dark. I will hopefully be bottling it this weekend. The hydrometer sample tasted amazing. FG was only 1.016 which seems a little high. How did yours finish? Minnesota this weekend, huh? Headed to the Husker game...

    Widmer Falconer's IPA. Very nice cheap IPA 6-pack. Too drinkable at 7%.

    Kvass

    The Mad Fermentationist has done a bunch of kvass experiments. Just go to his site, http://www.themadfermentationist.com/ and put "kvass" in the search box. I've been thinking about trying a kvass myself.

    I'm a big fan of Quenchers myself and it's only a few steps away from a record store with an old school arcade in the back. Had a Mikkeller single-hop Cascade IPA there in July. They've got a great tap list and bottle selection.

    DME at flame-out ?!

    Whenever I do a late addition of DME I collect about 2 quarts of my wort into a smaller pot and add the DME to that over low heat while whisking. Once all the clumps are broken up and i have a smooth mini-wort I add it back to the boil kettle.
