    Nope, I don't use a secondary vessel if my only post-fermentation step is dry-hopping. I just put the hops in a muslin bag and throw them in. The sediment stays in the bag that way.

    Labor Day = Brewing Day!! What you guys got planned?

    Just put the lid on my fermenter. Tried a variation of Scooby Brew's Darth Vader Black IPA. Had to use roasted barley instead of Carafa II - 12 oz instead of 1 lb. Definitely isn't as dark as I would have liked...but it's dark enough - and hopefully there are some pronounced roasted notes.

    Yeah, I'd say some sort of sour or lambic tops my list - just keep putting it off cause I know how long they have to age and I'd prefer my beer finish quicker. Still trying to finetune a Black IPA recipe. Then I'd say a Barleywine or some sort of Old Styel Ale wraps up my top 3.
