Do you ever get tired of big beers?

That's great that you don't like to brew session beers, but I think you're getting a little ahead of yourself with the response to the thread. It's not snobbery, it's just what some people like myself like to brew. I can easily find craft beer between 6-10% at my local store, but have a more...

Do you ever get tired of big beers?

Man, I can't tell you how tired I'm getting of big beers. However, I'd say that its much easier for me to find big beers at the store (micros at least) than good, flavorful, low alcohol beers. I like to drink large quantities of beer but I don't want to get sloppy. So my last batches have...

    21A Bitter American

I've never had the commercial version, so I have no idea what I'm shooting for in the clone but what do you all think of using WLP 007 in this beer instead of Cali? I'm thinking Stone Levitation-esque.

You know you're a home brewer when?

When you refer to the grounds left in the bottom of your coffee cup as "dregs".

    De Ranke XX Bitter question

I'd really like to pick your brain about brewing with 6-row and it's effects on a beer. I've never brewed with it and the only time I've really ever encountered it has been in discussion about it's use in american lager/adjunct brewing. Do you mean that you would use 100% 6-row? Have you...

American Amber Ale Caramel Amber Ale

Just bottled my second attempt at this, first with temp controls. This has been in the bottle for a week after two weeks in primary and even though it seems impossibly early, it might be the best beer I've brewed so far. Lots of caramel and fruit in the nose and a nice balance of hops and...

    De Ranke XX Bitter question

Belpaire, thanks for taking the time to report this. I think I'm going to use your recipe with your sugar and hop tweaks in one of my next two brews. I'm not sure if it's related, but the last bottle that I had of XX the beer poured a little hazy. Could this be an indicator of 6 row?

    Simcoe hybrid non-proprietary hop

Just a little more to add from Zymurgy about HBC 342: Pedigree: Open Pollination Aroma: Citrus, Pineapple, Melon Total Oils: 1.0-1.5 Beta: 4.5-5.5 Interestingly enough, another variety labeled HBC 369 has a pedigree listed as 50% Simcoe, 25% Nugget. The aroma description reads as...

    Ambient temp: 73* and rising

Seriously, consider Saisons. They're wonderful beers and like it hot. At least find out if they are something that you would enjoy. If it makes you feel any better, many historical beer producing regions had to take the summer off as well because it was too damn hot. So you could think of...

how much beer do you have?

I bottle in the summer and keg in the winter. As I was bottling yesterday, I had the strangest thought... I actually enjoyed it. Can't really explain why, but the thought occured to me that I could actually sell my kegging equipment and have no problem. Anyone gone from kegging back to...

how much beer do you have?

So I guess what you're all saying is that you need to drink more! Kidding aside, I think it shows that some people are like me, they enjoy brewing maybe a little more than drinking (or at least equally). I've taken a few months off for my first child. Now that he's about 2 months old, I'm...

    De Ranke XX Bitter question

It just was re-released in this quarter's private collection. I don't know, while I haven't had Fantome myself, it sounds like whatever wyeast isolated isn't all that over the top. I did a little poking around on this site and people are claiming that it is a surprisingly neutral yeast. My...

    De Ranke XX Bitter question

Thinking about yeast... what about this? Wyeast 3725 PC Beer Styles: Saison, Biere de Garde, Belgian Blonde Ale, Belgian Pale Ale, Belgian Golden Strong Ale Profile: Low to moderate ester production with subtle spiciness. Malty and full on the palate with initial sweetness. Finishes dry and...

    De Ranke XX Bitter question

Belpaire, I've been following your thread on BBB as well. I'm so glad you decided to give this a try and post, thank you. I'm curious as to your choice of yeast. I know that someone has posted that it is the T-58 yeast and that you had toyed with the idea of using 05. If you would, could...

First all-grain BIAB: IPA OG waaay too low

Hey, just a question for you, did you get this done at Brewfest? If so, I think that they must have just started crushing grain, which would explain why maybe their mill was off. Also, I don't think there is much you can do about your beer at this point. What you might do is blend it with a...

American Amber Ale Caramel Amber Ale

Just tasted this about 4 weeks into primary and it's great. Definitely has a Chinook'd flavor and aroma to it and has a nice malt backbone as well. More hop flavor and bitterness than I anticipated but great balance overall. Looks like a re-do to me!
