    Thanks for the responses. I've brewed it ~ a dozen times, as it is a favorite of mine, and is quite popular with family & friends. And I didn't pull out any home brew until after mashing, so I can't blame that for screwing up grain bill.

    BIAB pre-noob, sorry for annoying questions...

    You can use two paint strainer bags, splitting the grain bill between them, and clip them to the side of the pot. It is a bit of a pain to open them mid-mash to stir, but it works. Makes it easier to hoist the bags, since grain bill is split. I did that for awhile, but went the Wilserbag route...

    If you smack it and get it to pitching temp, you will be fine, if you planned to pitch without making a starter.When the pack swells, all that does is confirm there are viable yeast in the pack.

    If you use the Wyeast 3068, use a blow-off tube, and make sure you have adequate headspace in the fermenter, o/w it can get messy!

    In Munich, try the Weissbier/Weisswurst combo at Weisses Brauhaus. The Schneider Weiss on tap is the bomb, or the Spatenhaus, where the house beer is excellent, as is the food.

    Vanilla Extract-When to add it?

    I use Penzey's & add to bottling bucket. I usually bottle 1/2 the bucket, then add extract so I can contrast the difference. So far have used for porter and cream ale with good results. (When you soak vanilla beans in vodka you end up with ......vanilla extract!):mug:
