    The cascade would be the best of the 3 to bitter with, but for an IPA you are going to need more hops anyway. I would suggest buying some magnum or Columbus for bittering and more cascade and FF 7C's for flavor and aroma.

    Was at a local restaurant and the owner came out and was sitting with a couple ladies. One of them ordered a schlafly porter. He proceeds to say that it is a very good beer for people that normally drink bud light because it is lager-y.

    Thanks for pointing out that carapils is not a crystal malt. It is almost pointless to use it in conjunction with crystal malt as is does not add sweetness or color. I personally still do not like to go much over 10% crystal in my IPA's.

    I have never had the beer that your trying to clone. So with that said, i think your crystal is way to high for an IPA. Your recipe has almost 20% crystal malt. I would personally cut that down to 10% or less and mash at 150°. Also 1272 is my house yeast. It will leave some residual sweetness...

    Mash Tun size... I did read the sticky

    I use a 48 quart igloo cube with grain bills from 8 lbs to 24 lbs. I lose about 2° an hour with the smaller grain bills. I did insulate the lid with spray foam.

    what size mash tun?

    I made mine out of a 48 quart igloo ice cube. I made a cpvc manifold for it. Works great for five gallon and will hold 25# of grain!

    when to fly or batch

    Is batch sparging really faster? I fly sparge. To collect 6.5 gallon takes about 40 min. I fly sparge because thats what I'm comfortable with and thats how my system is set up, not because a brewery does it.

    How much homebrew do you currently have in bottles/keg?

    17 gallons in kegs and 4 cases of 12oz bottles and on case of 22oz bottles. Plus 5 gallon fermenting.

    House Yeast Strains?? Do you have any??

    I use wyeast 1272 for almost everything i brew. I brew mostly APA/IPA. I will occasionally use US-04.
