What is a good ice to wort ratio to cool it down to 80 deg?

I do not know gallon wise, but I've gotten by with less than 18lbs of ice (a bag from a convenient store) to cool down about 3 gallons of wort. I now bag ice from my ice maker a couple days before hand for the ice bath.

I am two weeks into a primary

You can do whatever you want. I primary for at least 3-4 weeks (for most ales), then keg/bottle. You can take a gravity reading and if it is not ready, replace the lid/stopper/airlock. Just make sure everything is sanitized when taking the reading.

    Tricks to control temp?

Search "swamp cooler" on here for all the info you could ever need. Freeze water bottles and switch them out twice a day or more as needed. You will get the hang of it.

    immersion chiller :)

Let us know (honestly) how it does! I have been looking to make that exact IC (same length/diameter) since I brew mini-mash's and only need to cool 2-3 gallons of wort. Did you use a corny keg to shape it?

    Force Carbing?

If you are referring to burst carbing (force carbing refers to adding CO2 to the beer in any way), which is setting the gauge at 30psi for a day or so, go for it. When I burst carb I chil the keg for a day or two, then set the gauge at 30psi for a day or so, relieve the pressure, then set the...

    Are these yeast rafts?

LOL. Will they eventually fall out of suspension? It has been 2.5 weeks in the primary. The SG is 1.007, I was planning on kegging within the next week.

    Are these yeast rafts?

I have been searching for photos of yeast rafts, but none of the pictures I have come across look like this: AHS Texas Blonde Ale with WLP029 German Ale/Kolsch yeast. Tasted fine (SG of 1.007). Will these eventually drop to the bottom or can I transfer to a keg with the beer looking like...
