    Session IPA Question

Thanks for all the input. Hopefully it will mellow out with a little age. I like a little wheat in my lighter side pale ales, thats just how I have been rolling... I fermented this one at 65 and I like the little complexity that I get from 1212. Plus, I think it drops out faster than 1056...

    Session IPA Question

Hi- I have been trying to make a light IPA since before I had grey hair and have never been able to get it quite right. Most recently we made one on 9/10/13, and it is nearly undrinkable. It is wicked dank, spicy, pungent, with a touch of citrus. The pours continue to have too much...

Did I ruin my oatmeal stout?

I was worried that the whirfloc would add something undesirable. OH and it was covered the whole time... The room had this great smell while I was not paying attention., but the final beer had lost that wonderful aroma. I just took a gravity from the final batch at 1.055. So I think I was...

Did I ruin my oatmeal stout?

Hi- Was making Jamils oatmeal stout recipe and things were pretty much right on track until I decided to wait before cooling and transferring to my carboy. I started a whirlpool and decided to let it sit for about an hour to take care of something else. When I got back I realized that the...

American Saison? go or no go

Well, this turned out to be quite the freak, not really what I had in mind, but excellent none the less. In addition to the above recipe, I dry hopped several ounces of the homegrown hops. OG 1.053 -> 1.002. When young, it smelled and tasted like a battle between the Wy3711 and the citrusy...

    American IPA

Thanks- I was looking for some of that resin dankness from the CTZ. Maybe I will swap the amarillo for some CTZ then. Appreciate the insight!

    American IPA

Thanks! I figured that by spreading them out in the last 20 minutes in small doses I would be able to keep the bitterness reasonable and get big hop flavor/aroma...

    American IPA

Hi- I am planning on brewing up an American IPA this weekend and am looking for some input. I know that my efficiency is pretty poor, but this plan is inline with what I typically yield when adding alot of hops. I have never brewed with Apollo but understand that it is similar to CTZ...

    Low final gravity question

Thanks every one. I use a new thermapen that came with a certificate. I will check it against boiling H2O to see if it is really calibrated. I guess that I did not realize that mash temp has that big of an effect on the final gravity. I figured that it was more of a fine point rather than...

    Low final gravity question

Lately I have been getting extremely low final gravities and am looking for suggestions as to what might be going on. A couple of batches have tasted thin and lacking in flavor/body. Recently, they have tasted fine, but I am getting crazy high attenuation based on the yeast’s ranges. A lot of...

American Pale Ale Citra Pale Ale- Oddsides Clone

Holy Citra! I followed the recipe- OG 1.055, FG 1.005 with pacman yeast. I dont think I have ever had anything like this before- the tropical mango thing is totally over the top! Great recipe- I was concerned about only using late additions, but it is perfectly balanced. I could smell this...

    Pacman Question

To follow up on my question. The yeast was fine and the beer turned out awesome. Pacman is beastly. Took my porter from 1.051 to 1.008 in 5 days! 83% attenuation. Very clean fermentation at 62 deg.

    Pacman Question

Thanks- The starter is cranking so I think I will go with it. I was just wondering if anyone else has noticed that pacman forms a different cake than some other strains. The consistency seemed different from chico, which is my normal yeast...

    Pacman Question

Hi- I recently washed and jared some packman from a pale ale. After being in the fridge a few weeks, I took some out today to pitch into a starter than I plan on pitching tomorrow. The cake at the bottom of the jars looks different from what I have seen with other yeasts. It was more of a...

American Saison? go or no go

Thanks- I think you are about right on the wet/dry ratio. Brewed it up last night- smelled and tasted like a nice APA. Looking forward to giving it a try.

American Saison? go or no go

Hi all- This is my first post here and I am interested in your thoughts on this off style "saison" that we are planning on brewing up tonight. Recently I had the pleasure of trying a LA chouffe houblon ipa and found it to be totally incredible. The way the American hops (Amarillo, and...
