    The Victory will give your beer a very toasty, biscuity character with little sweetness. The Vienna would have contributed more of a rich and malty character. It's definitely going to be a different beer than originally intended, although I personally like a little toastiness in my IPA's.

    I've never ordered from them, mainly because of poor selection. Thanks for sharing your experience. I've heard more bad than good about them so I doubt I'll ever order anything from them. There's plenty of good on-line suppliers out there anyway.

    If your going for an extra-light extract, Pilsen would be the way to go. Gold is great for an APA in my opinion, but if color is a concern (in a partial boil for example) pilsen would work fine.

    Northern Brewer Gold is essentially a light malt extract syrup. I've used Northern Brewer's extract quite a few times with great results. You can't go wrong with their extracts, IMO.

    The bottom line here is if you steep and sparge properly you'll get pretty much all the malt goodness out of your grains possible and squeezing or collecting the drippings from the grain bag won't even be an issue.

    There's alot of stories on here from folks who squeezed the bag with no issues. Just do a search on "squeeze grain bag" and see for yourself. You may have nothing to worry about here.

    You can extract tannins that can give your brew a nasty bitter taste. There's some debate as to whether or not this is true, but why risk it.

    +1 on Sterling for bittering. Liberty and Sterling are a perfect match. Use Sterling for bittering and Liberty for flavor and aroma, maybe with a little more Sterling late in the boil for added complexity. Aside from hops, what's your recipe?
