    Starting with 5.5 or 6 gallons is what I needed. I believe I did 5 gallons. It's sad to see all that empty space in my 5 gallon carboy. :rolleyes:

    Yeah, probably best to leave it alone. I'll be marking my 6.5 carboy (BEFORE) I brew. Another lesson learned. Thanks Guys!

    After racking to the secondary I see that I have plenty of room in my 5-gallon carboy. What would happen if I were to add 1 or 2 quarts of water? Am I being too greedy?

    Why I didn't think of measuring my 6.5 gallon carboy ahead of time is beyond me. Doh! What is a P-Touch? I'm thinkin' a Sharpie pen would come off when cleaned. Maybe some black enamel paint.

    It was overpowering. I suppose if I liked green beans, it might have smelled good. It was kinda funny, because for a few minutes I thought I would defend the smell, but I couldn't. Now remember I've never smelled wort, so I was expecting a sweet smell.

    Fermentation in plastic

    I found glass 5 gallon jugs at "Kitchen & Company" in New Churchman's Road in Christiana Delaware. I think it's a chain store. I got mine for $12.99. BTW, first post... hello all! -Dave
