    I would say you should probably have some fans and ventilation but, there is a lot of debate about this on these forums. The manufacturer typically lists a minimum clearance distance for all sides of the refrigeration units if they are not standalone. I would recommend looking at the owners...

    If your unit is getting to freezing temps, hooking up an inkbird will work fine.

    I wouldn't worry about it. Its in a kettle and I assume the kettle is for boiling. This means the boil/steam should eliminate everything you're concerned about.

    I would say that 162 seems really high for mash temp. Most of my mash temps are between 148 - 156. Stouts typically have a higher temp mash.
