    It will get below freezing in the winter here (I'm in North Carolina.) I do have a garage, but it is connected to the house, I would assume that it is probobly a few degrees cooler than the basement, but I doubt that it gets into the 40's.

    David, Thanks for the advice, you've eased my mind about botteling. With the Woodchucks, I'm not necessarily wanting to copy the flavor, but more the character - I don’t want it to be like a sparkling apple wine, but more like an apple beer. Also, what do you mean by "straight cider?"
