    Hibiscus Weizen

    This is a great refreshing summer beer. It has a nice tart citrusy smoothness to it. I didn't add any citrus to it other than bitter orange peel in the boil. I'm pretty pleased how it turned out. :mug:

    After 2 and a half weeks I tasted it again. Much better, that bready/yeasty flavor isn't so apparent. The Hibiscus does shine in this beer. I racked to the keg and primed with 1.80 oz. of corn sugar. Put it in the fridge this morning.

    After corn sugar priming in the keg. About 3 weeks later. A light smokeyness to it, better crispness to it than the extract version. I'm very pleased.

    So after reading more than I cared to. I decided 4 oz. of cacao nibs and 8oz. of whole bean Sumatra coffee. The nib were raw. Convect baked at 275 for 5min. They smelled like brownies. Put the nibs and coffee in a sock. Soaked in this, cut to 40% for 24 hours...

    Thanks, it was a spur of the moment fix. My jet-sparge hadn't arrived when making my first all grain batch. It was a friend's idea. I had that little bucket laying around, seems to work ok.
