    Fruity Pale Ale/IPA feedback

    IMO only, I would agree with this. I'd replace the wheat with Munich. And, I'd do a 5 or 10 minute addition with all three hops and balanced to achieve target IBUs (which I might suggest bumping up to 40 or 45). Sounds tasty!

    Good experience with dry yeast. What are your tips?

    Completely non-scientific, but I had my best result with Nottie when it's was over-pitched by 2x. Before that, a fellow brewer and I detected a signature taste that we were not fond of. At the 2x over-pitch, the beer was cleaner tasting. YMMV.

    WY1968 too cold

    Give it another day. That happened to me once. It eventually started and finished at the expected FG. In my case, I repitched slurry that could have used a bit more time to warm up from the fridge into 67F wort. Then, I put the fermenter in a 64F basement and a pseudo swamp cooler filled...
