I will be brewing the honey Kolsch kit from Northern Brewer this weekend. It uses the Wyeast 1010. Would you recommend the same lagering process, or is it limited to just the 2565 yeast (not the beer type)?

I did the same exact thing on Saturday, but was afraid of getting hair/arm hair in the brew. So I re-poured as much of the beer back into the stock kettle as I could then fished the o-ring out of the bottom of the fermentation bucket with a spoon. I was afraid this might be a bit too much...

I discovered I had a beer allergy when I first started stealing the old man’s Gobles from the garage. In the 20+ years I have come to find that any alcoholic drink with grain makes me look/feel like I have hay fever by the end of the first glassful- wheezing, red face, clogged sinuses, etc...
