    Love your thinking! I don't know why this didn't cross my mind :p That kind of thing's pretty wide spread here, the lack of health and safety is mind boggling. Only thing I would be concerned about for this application is having more difficulty getting the insulation panels to line up properly.

    We'll be looking into harvesting our yeast at some point but have just started selling (only kegging for now) so consider a fresh pitch a safer option for the moment. One step at a time and all that. We're based in Laos :)

    Fully agree, I probably should have mentioned that. I think the yeast nutrient is a handy addition at this point as it may not be the ideal conditions for getting the yeast to wake up again and complete their job at the best of health. I wasn't seeing any signs of reactivation after a few days...

    Thanks very much for the fast response! I agree, if we had other options at this point we would be going for something /larger/taller/both. These really are our only (economic) options at the moment as the next vessels you can buy here are 500l! We can take measures to try and avoid boil-overs...
