    Hefeweizen slow to finish fermentation

    Started with a Portland Hefeweizen kit bought from a LHBS and substituted the dry yeast with a smack pack wyeast 1007. After just 8 hours from pitching the yeast, the blow off tube was almost like a volcano. OG before pitching was 1.058 and at day 11 it was only down to 1.022. Here it's day...
