    Wine kits

    Anyone have some suggestions on what I can add to spice up any of the Vino Italiano kits? I'd like to make them a bit more personal and put my own spin on them. I've made several and I really like the Cab-Merlot and Zinfin Blush.

    Hey everyone, I've got 3 gal plum, 1 gal strawberry Meade, 2 1/2 gal blueberry port and 1 gal strawberry/ blueberry wine all from this year. I also have 1 1/2 gal pear wine aging from last fall. Also 2 kits going a 6 gal Trio Blanca and 3 gal chocolate strawberry port.

    If you don't live close to a supplier as I don't, Amazon.com has 3 gal carboys from Paklab for $25.00 with free shipping. I believe they are Italian made. I've purchased the 6 gal from them before and was very satisfied.

    Strawberry Meade

    The recipe follows: 2 1/2 pounds strawberries 2 1/2 pounds honey 6 pints water 2 tsp acid blend 1/2 tsp peptic enzyme 3/4 energizer 1 campden tablet crushed 1 pkg yeast I purchase local honey which I feel is sweeter than the commercial brands. Could this be the reason the sg is so high? Thanks.

    Looking for decent deals re:wine making..

    I recently purchased two 23L/6gal carboys from Amazon.com for $60. They are from Paklab but made in Italy. The price included S/H. They arrived unscathed. They also sell wine kits. I haven't tried them but I'm sure an experienced wine maker can tweak them to make a decent table wine.

    Port kit

    I'd like to know how to make a port kit less sweet? I've made several ports from kits and the last one I made was an Apple Tatin Port and it was really too sweet. I'm planning on making Wine Experts Blackberry Port but don't want it as sweet as the Apple Tatin Port. Thanks.
