To Secondary or Not? John Palmer and Jamil Zainasheff Weigh In

Dude, I agree about the bikes and beer. I brew, and I own a '36 Flathead and a '78 Shovelhead Electra-Glide. both restored by me. Everything's better when ya do it yourself. ;) I haven't secondaried a beer, yet. I just follow the Cooper's instructions and have since decided to not deviate...

    Darkened lager?

Yes, you remove the lid, then the collar, then replace the lid. I guess that air can get in then. I am very quick with it, but my Step-Dad did this one for me, as I was out of state. I'll do it ALL, myself, from now on. I assume that the beer should just be thrown out?

    Darkened lager?

Maybe it was the artesian well water that I used? That is the only difference between this batch and my other 2 of the same package.

    Darkened lager?

4 1/2 weeks old and this lager now has a slime covering the whole surface of the beer with neat white lightning streaks across it. It tastes like it has vinegar in it, and the "scum" is thickening and growing down into the beer. I think I have failed at making beer, this time.

    Yeast inactive?

I am not at home, so I don't have my recipe with me. I'll post the entire recipe, when I get back home. I do recall that it was around 4-6 pounds of sugar, I think.

    Yeast inactive?

The haha was aimed at the not having a clue. Can I pour the SG sample back in, with wine? I mean, taking samples takes a bit of the good stuff and I'm starting out with only a gallon, in the first place.

    Yeast inactive?

So...you think I'm still ok? I haven't a clue to what's going on in that carboy. hahaha SG measurements?

    Yeast inactive?

This is my first attempt at wine-making, tho I have been beer brewing for a few months, now. I followed a recipe for peach wine and everything went fine for about 2 weeks. I pitched to my secondary, and the airlock was popping about every 2 seconds, letting a nice bubble up. After 2 days of...

    Darkened lager?

Oh, and I couldn't have scorched it. I don't boil it. I boil water and then add everything to the water, as recommended by Cooper's in their instructions.

    Darkened lager?

I use a Cooper's kit. The Kraussen Collar is the plastic ring that takes the place of an airlock. It's located between the vat and the cover and allows the excess gases to ease out around it. I remove it on the day recommended by Cooper's. This is my 3rd Lager package from them, and it was...

    Darkened lager?

I'm at the point of having a steady SG (1009) for the past 5 days on my 3rd Cooper's Lager package. It's been in primary for 3 weeks as of this past friday. I always get a golden colored beer, much like what you'd see from a bought beer in a can or bottle (Bud, Busch, etc.). This beer has turned...

    Fruity ales

From what I've been told in this thread, you simply rack it onto the puree of the fruit. The Blueberry Ale that I drank, every Spring, at Big Bear, was ale with a subtle blueberry flavor. It wasn't tart, it was simply blueberry flavor in the ale. Does that even make sense the way I said it?

    Fruity ales

I assume so. That's what I would do.

    Fruity ales

Trub! Ok, cool. Thank you, very much. Now, I have a few days to get fruit, then...experimentation time! YAY!

    Fruity ales

Hmmm...maybe I was too stupid on that last post? What's hanging me up is that I don't know whether or not I need to siphon out that yeast and stuff from the bottom of the primary vat. I think that I read that it's called "Turb"? Does that need to go into the secondary, or do I just dump that...
