Added too much water, high gravity after 1.5 weeks in primary

Just wanted to update: I brought the saison upstairs on Monday. It was sitting at 59 degrees Fahrenheit! It looked as if the krausen had sunk all the way in and there was no activity, but I knew by the gravity (now at 1.03) it was nowhere near done. As of last night it was at 67F, and the...

Gearing up to brew a tripel, need help finding the correct MEs from the local store.

I was doing some reading on the wyeast site and it was saying that if my OG is over 1.065, that I should double pitch. I'm going to be using WL530, should I pick up two just in case?

I'm using a hydrometer, and fermenting at about 60F. Perhaps I'll bring it up to the apartment for one last week of fermenting.

Added too much water, high gravity after 1.5 weeks in primary

Hey folks, I'm brewing the northern brewers saison dupont clone and got a wee bit too drunk when brewing, and added too much water to bring it up(or in this case, over) to volume. Didn't get a good gravity reading prior to adding yeast. The gravity last I checked, two days ago(about 1.5 weeks...

    Update on my first brew

About a week ago I posted a few questions regarding my first brew: an extract clone kit of the Weihanstephaner Hefe Weissbier. I'm pleased to say that brew day went well, and we got done soaking and cleaning a grip of bottles today. I also went down and checked the gravity (this is almost...

    First Brew, Cooling the Wort?

Another one: Assuming everything is cleaned+sanitized properly, is there anything wrong with checking my gravity directly in the fermenter or will the hydrometer fall over? If that's the case, can I do it in a 22oz bottle? I should probably just go get a tube or something.
