    diacetyl problem

    I had some success getting rid of diacetyl flavor in one of my lagers by bringing it back up to fermentation temp and pitching more yeast. Let it sit for a week and the flavor was gone.

    "It also has the room in the unit to fit 7 kegs plus CO2." Probably want to specify "corny kegs" or similar, just to avoid confusion on the part of someone who doesn't know any better. Really nice setup. Shame you're letting it go.

    https://www.homebrewtalk.com/f81/caramel-apple-cider-235368/ The recipe in that thread usually gets me 8.5-9% abv delicious cider. Don't go overboard with the back-sweetening, though. I found that 1/4cup honey per gallon of cider is plenty (bordering on too much).

    I suppose you could technically build a shelving system inside the side-by-side in order to fit more fermenting vessels in there, but I would be careful about measuring the inside height to make sure you actually have room to stack them. Don't forget the extra height taken up by the airlocks!

    You'd have more floorspace in a chest freezer if you want to ferment multiple brews. If you have a conical or something tall that won't fit in a chest freezer, you might want to go side-by-side, but I personally ferment in my chest freezer and use my side-by-side as a kegerator :)

    I used to love SA Oktoberfest, but just can't drink it this year. Not sure if it's different or my palate has changed. I hope the same doesn't happen when the Winter Lager rolls out...
