Thanks for all the comments guys... with the IPA i'm doing the hop bill is at 68 IBU with 18.2 Summit and 8.9 Amarillo. For some reason I want to make a bunch of hop additions and have some high Alpha hops here.
I fudged with it a tiny bit

.5 Amarillo 20 Min
.5 summit 15 Min...
The hop schedule maybe would look something like this
.5 oz Summit @ 60 Min
.5 oz Amarillo @ 20 Min
.5 oz Summit @ 10 Min
.5 oz Amarillo @ 10 Min
.5 oz Summit @ 5 Min
.5 Oz Amarillo @ 5 Min
.5 oz of each for dry hopping
For some reason I didn't toss my hops in the fridge right away. I have had 3 1 oz packs (vacuum sealed) in my basement of Saaz and German Tradition. Are these OK to use?
I am somewhat intrigued and I'm not sure why about creating an IPA with the mixture of these two hops.
I know Amarillo has already become almost overused with some IPA's but what Summit. What do you guys know about this hop? would this be a good mixture?
This is my second attempt at writing a recipe. what do you make of it? What about the hop usage?

I am brewing a dubbel this week, and I was wondering how long I should let it sit in a fermenter.
I know that I read a recipe for a tripel that recommended that the beer sit in a secondary for 9-12 months.
What about a dubbel?
No I got that much... I was wondering what is different (for mash only grains) between the processes. It seems like mashing is only steeping except that water is poured through it... I just wasn't sure what the difference is.
It however has been somewhat answered... i think... i will read more.
I think I might have gone with the dark candi sugar if I wasn't concerned so much with keeping the color in standard dubbel range. Though I could have dropped that bit of chocolate malt...
I do wonder how that will taste.
Does anyone think the chocolate malt is a bit of overkill?
I'm a real newbie, so forgive me. I'm just trying to get behind the point of all of this. (And I know I am missing something). How is this different than just steeping the grains in your water at 155F before you add extract?
