    Under Shot Target Volume (Understatement of the Year)

    I under shot my target volume by more than a gallon. My OG is really high, of course. I have let it ferment for about a month and a half now and am contemplating adding water to bring my volume up. Is there any reason not to do so? Would you?

    I over shot my sacch' rest temps by 6 degrees F, and undershot my mash out temp by 10 degrees F. My goal OG was 1.072 and my actual was 1.070. Ideas/guesses on how this may play out?

    How do you mark gallons in your bot?

    I really like the notches in my plastic paddle. Make sure you really clean them well. Once you get a couple marked, you can measure with a ruler to mark the rest. I labelled mine with roman numerals.

    So I'm on my 3rd batch of brew. I am brewing an amber ale from an extract kit. The recipe says to all it to ferment for 4 weeks and then let it bottle condition for for 2. Its been 5 weeks and my airlock is still bubbling strong (3x + per minute). My brain says to wait it out for the bubbles to...

    Is there a better priming sugar to use than another? I am not a big fan of corn sugar and was thinking about using Sugar in the Raw. Any thoughts?
