    definitely give it a try. There's no necessity to eat the beer cheese which resides on top after fermentation. But it is not that bad if you do. I plan to make more cream based beers in the future, possibly a peaches and cream beer for the summer.

    I just bottled it, I gave it to 4 other people as taste testers, and I got rave reviews!!!!!! This stuff is great, it is thick and creamy partially from the bananas in it, it tastes very good. I estimate it is 10% alcohol right now. The Target is 12.5% which with some time in the bottle I think...

    Very true, especialy since I boiled it I don't foresee infection, its been weeks and no spoilage.

    It tastes very banana-ish now with strong brown sugar, cinnamon and spice notes along with a vanilla ending. The cream flavor (Partiality from the lactose added earlier) adds a nice finish and the beer has considerable body. No sour flavors or smells. Due to the amount of spices and molasses...
