    definitely give it a try. There's no necessity to eat the beer cheese which resides on top after fermentation. But it is not that bad if you do. I plan to make more cream based beers in the future, possibly a peaches and cream beer for the summer.

    I just bottled it, I gave it to 4 other people as taste testers, and I got rave reviews!!!!!! This stuff is great, it is thick and creamy partially from the bananas in it, it tastes very good. I estimate it is 10% alcohol right now. The Target is 12.5% which with some time in the bottle I think...

    Very true, especialy since I boiled it I don't foresee infection, its been weeks and no spoilage.

    Definitely adding the bananas to the primary fermentation tank is preferable. boiling them in the wort doesnt add much flavor and it produces a lot of trube. I add sliced and ripened bananas to a grain sock to ferment, it makes for easier extraction.

    I would avoid using a propane blowtorch because it very well may imparted propane taste to your grain. However I would use the broil function of your oven, and slightly move your rack to the point where you believe that you are burning hulls yet toasting the starch. It is much more controled...

    if I were you I would put in a white peppercorn as opposed to a black peppercorns it has a slightly more fruity flavor which would more likely complement the lime in your beer
