I have so many batches of this stuff in rotation. I use concentrate and usually don't dilute it as much as the instructions say (Seneca Farms concentrate in the grocery store). Then I add 1.5lbs sugar to ferment out with Montrachet(sp?). I've never taken gravity readings as it's unimportant to...
I'll be late. Gotta work until 2pm. If I can make it to the tasting then I'll bring some brews with me. An IPA, Scottish 60, and maybe an apple wine or two. But I doubt I'll make it from Canton in time for that.
I got my 60qt aluminum pot in today. Besides some dings in the lid and a slight bend (which I easily straightened out; hey, it's aluminum) the thing looks like a quality pot. Walls aren't thin at all and it's quite sturdy. Can't wait to use it.
The second time I used my 15gal Rubbermaid cooler I heard a lot of cracking noises. But noticed nothing when I took the grain out. I think the inside insulation was cracking. The walls didn't warp or anything. I've used it a few times since then.
