I’ve never understood the love for malted oats on here. I’ve hated every beer I’ve ever made with them. I’ve always had better luck with Flaked oats or wheat malt.
Interesting that they need to back off the 2Row with certain hops.
I wasted a lot of time and money trying to reproduce that TH flavor. A few of my takeaways…
- I drink a decent amount of TH, and it’s been a long time since I’ve had a beer that has that vintage TH flavor. At least at the level is use to be at.

They claim they target 1.016? I don’t believe I’ve ever measured their beer but I would be shocked if they were under 1.020. I would have guess even higher. I’ve had 1 or 2 that I would’ve guessed closer to 1.030, but certainly not the norm.

While on this topic, I’m curious how everyone is measuring for water chemistry. For those of you who measure mash volume and add salts to that kettle, are you doing the same to the HLT (or sparge water)?

I’m also typically around 16oz. 5# per bbl = (5x16) x 6.5 / 31 = 16.77 oz.

I read that description as confirmed. It’s not confirmed if it’s all American hops, but it almost certainly is. It’s definitely heavy Amarillo, most likely some Citra, and probably a kiss of Columbus, maybe even a pinch of Cascade.
Awhile back in this thread we discussed which hops are used in which beers. In the description for their 10th anniversary Haze, they confirmed Amarillo. I think most of us knew this was a heavy Amarillo beer, but this confirms it.

If you’re building a lot of starters for DIPAs, or other big beers, I highly recommend this. I thought it was overkill, but after getting in trouble with the wife about 1000 times for messy overflows, I decided to give this a shot. So much easier than the 2000.
You can definitely taste the crystal in the majority of their beers. No surprise there, but very surprised Haze and Julius were Simcoe heavy. I don’t get that at all.
Like Nate, I also find it ridiculous on Facebook all these beer connoisseurs calling any ipa with crystal malt oxidized...
My process aligns with Fidens, or I guess I should say my process is close but will be shifting to their numbers on current / next batch. I was aiming for 5.3-5.4 in the Mash but that’s not the first time I’ve heard going lower for this style.
I use lactic in the kettle, phosphoric in the FV...
