    One of my last brews I made before taking a 2+ year break...this stout has been 'aging' for nearly 2 1/2 years!     I do rehydrate US-05 when I use it, but I found that warming up the yeast to pitching temperature made the biggest difference in lag times. I just take it out of the fridge before starting the mash and leave it on the counter until pitching.

    It's done when it's done. I've had 1 gallon batches finish in just under a week and a couple that took upwards of 3. You can always get a hydrometer and start measuring the SG if you want to be sure.

    I do. I fold it over and use a plastic clip to keep it sealed and put it back in the fridge until I use the rest. I wouldn't recommend waiting too long, but I used a partial pack of US-05 that had been stored like that for over a month.

    I've used 1/2 a packet of dry yeast for 1 gallon batches without issue. For making small measurements, a scale like this will work well. Converting to grams may also be helpful.

    Indeed! My last Brooklyn Brewshop kit was only down to 1.021 after the first week (OG was 1.047). It took another two weeks to get down to the FG of 1.013.
