I am pretty much cold smoking. I am smoking a turkey and I connected a dryer tube to the smokestack and connected it to a box where the grain is being smoked.
I a planning to smoke some grain tomorrow. I have always used pre-smoked malt before this so it is a new experience.
After smoking the malt, how long do I need to let it sit before brewing with it? I was hoping to brew on Friday.
I recently brewed a RIS using Wyeast Denny's Favorite 50. I mashed at 152 and fermented for 4 weeks before secondary. Initial gravity was 1.104 and final gravity is 1.032. That is an apparent attenuation of 69%. It tastes pretty good, but that seems quite high. Should I dump some US-05 in there...
