    LOL, Belgian Specialty is what I was talking about. You have the option to create a new style that doesn't exist. So yes, you can enter BJCP competitions like that... From BJCP for 16 E: Comments: This is a catch-all category for any Belgian-style beer not fitting any other Belgian style...

    Pellicles are cool, but as said they are just a reaction to oxygen. On my sours, every couple of months I pull a sample to check gravity to a point and to monitor flavor development. Each time the pellicle morphs (again cool). Supplication clone "morph"

    How about something like this: 45lbs Maris Otter 2.5lbs Crystal 80 2.5lbs Crystal 40 1lb Roasted Barley 4.5 oz Perle (8%) @ 60 minutes WLP004 - irish ale Should come out 1.055 25 IBU and 15 SRM. Good luck and keep us posted.
