    Sorry, ginger ale is just what we're calling it and where some of the inspiration came from. It's 3.5 lbs honey and about .5 lbs ginger that will be fermented dry and then primed and bottle carbed. So it is actually a ginger mead. So +1 = 590.06 :)

    OK, I'm looking to do my second beer today. I really want to try a brown ale. I think what I'm looking for is more of an English style: more of a malty flavor, with enough hops to balance it out, but not too bitter.     I have what I believe you're referring to...it's a tube with a pin and is used to fill bottles by pressing the pin in on the bottom of the bottles, but since I don't have the spigot it will have to be siphon fed.

    Yes, the priming sugar solution will be boiled and cooled. For the hydrometer thing, yeah...that was really unfortunate and unexpected. I never even got to take the OG reading of my first beer. Oh well. I'll either leave the water alone or shake holding the heavy end next time.

    My primary doesn't have a spigot, so I'm wondering if I should still rack from the carboy over to the bucket and then bottle from there. The reason I ask is because it seems that when you pour in the priming sugar you would have to stir it up in the carboy, which would probably kick up some of...

I do have a glass carboy that I'm racking to for secondary fermentation, so I was planning on around 7 days in the primary, 2 weeks in the secondary, and then start sampling bottles randomly after 1-2 weeks in bottles. Seem like a good enough schedule...

    Yeah, that's kinda what I was thinking. It looks easy enough and should give me a small feel for every process of brewing, not just boiling some extract and calling it a week. As for the yeast...I really have no clue what I'll use. I don't know ANYTHING about the different types of yeasts...
