that's how i do it. or just tie the bag onto the end of the tube. both work fine. mind you i give the bags a good soak in starsan solution just prior.

safbrew t-58 is a belgian style dry yeast. i just brewed a belgian rye with it last night. it is a beast of a yeast too.

It has been a number of years but I'm pretty sure manhattan beach is about 18 miles north of long beach. In Long beach, I recall enjoying "the yard house". a lot of beers on tap, served out of the yard tall glasses.
