    I bottled a couple weeks ago (Belgian Dubbel with Trappist yeast) .. and the bottled beer sat in my basement ... which I notice now is cold, probably upper 50's in temp. I noticed after about 1 1/2 weeks and again last night - 2 weeks that the beer is only slightly carbonated. I drank them...

    If I have extra in a container on the counter, I usually add some tea/sugar or ACV to keep the scoby at least in liquid. Other than that, you can store them in the fridge and they will stop feeding and go dormant. Take them out a day before using to warm them up and get them going again.

    Favorite thermometer and why?

    +2 I like the Thermapen because it is obviously the creme of the crop. But I love the price of the Frys one better. Would like to know if anyone who is using can answer how long it takes for the readout and if they have had any issues thus far.

    Isn't one of the reasons you would put it into the 2nd is to inhibit any off flavors from the dead yeast? Just curious how it works or whether it becomes a moot point on a Wit.

    Yeah that's why I say use glass. polycarbonate was what I was lookin for in terms of the Bisphenol A culprit. But I try to drink from glass no matter what. Glass > plastic.

    The blue rigid 2 1/2 - 5 gallon water bottles, like those you commonly see in office buildings will have Bisphenol A in them. Just like the baby bottles. Which is why glass baby bottles are making a comeback, at least in alternative foods and living community. http://www.ewg.org/node/21540...
