I just gave Vic Secret another chance. It totally overpowered HBC 1019, which is no small feat. I was hoping the harshness would fade, but it never did.
All mosaic gluten free NEIPA. Things are really coming together. Body and head retention are on point. Digging the water profile, hop schedule and grist. Thinking I'll just dial back the caramillet just a bit and it'll be a homerun.
Knocking out 2 gluten free brews tomorrow...
1) Classic American Pils w/ Willamette
2) Cold IPA w/ Citra, Simcoe, Centennial & Columbus
Both with W34/70 fermented in the low 60's
