Here in central IL we have a great underground water source and many bottling companies sell the water from it as natural spring water. Needless to say I just use tap water.

I can't disagree here. I have plans to do a large batch of barleywine and should have done it to start with since aging takes so long. I actually didn't realise how long they took until after I had bought the supplies.

The 1 gallons are typically for trying out new stuff at a lower risk. Also I have the equipment to do 1 gallon all grain but only partial mash or extract in larger batches.

I'm sure the general consensus will be there can never be to many going but when I recapped on my closet I thought I might have a problem.
Summary:
5 gallons of hard cider
5 gallons rye stout
5 gallons belgian dubbel
1 gallon barleywine
1 gallon brown ale
1 gallon oatmeal stout
1 gallon rum...
The problem I have with re pitching is that I have to order liquid yeast because the only store in my area only sells dry and not much of that even. I don't think they carry any belgian strains. So I hope this gets going soon.

I'm still fairly new and I started a Belgian Dubbel extract 27 hours ago. I used White Labs Trappist yeast. I have had a few bubbles in the airlock and a light layer of foam on the top of my brew. The foam doesn't cover the whole top of the batch it is so light. Should I be concerned yet? I...
In the future when you use snow put it in a container with water like an ice bath. If you put your pot directly in the snow it melts the layer right around the pot then the snow insulates from the cold like an igloo. That's probably why it took that long.
