Hey. I brewed a Dopplebock, bavarian yeast,big starter, 1.075 starting gravity after 3 weeks at 48 degrees i have 1.030. Whatto do? Warm up and add a ale yeast? Would appreciate some advice...

Hey all, this might sound stupid,
But I've cold crashed my beer and want to bottle some of it. Does the beer need to be at room temp while bottling to get the yeast and surgar going?
Any help is appreciated.

Oly is, ok. Was the best outta the three. When brewed in oly. PBR was also brewed by oly or visa versa. Dad worked there 27 years...

anyone have one the want to part with? I live in the NW. so anyone reasonably close I can drive to, like under 1000 miles. gots cash, need anything for partial trade? I have a few brew kettles, one sabco with false bottom. also a copper coil chiller.
