It could be done, I have had them finish in 48 hours before. Take a reading and check. If not, I have put in a nother batch of yeast and finished. Good Luck.
Are you checking your OG and ajusting that for temp? If you check you OG at a temp of 130 it can be off by 10+ on your reading, then when it cools and you check it again it's alot higher.
Helicopters for the last 25 years, but just started brewing a few months ago. I am in SLC while my Bass clone is fermenting in Boise. Get home this weakend to keg.
I have brewed two batches and have the same problem. Both have a late strong bitter taste. I was going to cut the hops in the recipe by half, don't know what else to do.
