Does this GF ale have a similar flavor and mouth feel to a regular All Grain Pale?

After applying the 30psi at the beginning of carbonation, do you leave the regulator set at 30 psi for a couple of days until the carbonation level you want is achieved?
Is the relatively low fermentation temp critical to the outcome? I might be able to bring my chamber temp to the low 60's but not 45? What is the pH of your water? Also, if using a pH stabilizer, would the Acid malt be needed?

Let's see if I grasp it. Vorlauf the liquid in the mash tun until it runs relatively clear. Then begin catching what liquid is left in the mash tun in the boil kettle. Drain all that liquid then begin to sparge? Vorlauf the sparge water too?
