    Conserving Water......

    Here in San Diego, it is hard enough to keep my lawn green, so every drop goes out on to the grass. Sometimes I will fill the garden waste trash cans and pour it into the flower beds.

    Amylase will breakdown the long chain sugars to be more fermentable, but you will still need yeast present to convert these sugars to alcohol. You may want to make sure that any residual yeast is roused up from the bottom of the keg or add a bit more.

    Plastic 15gallon kegs for?

    The liquor store probably still charges the same deposit as a SS Keg because they are also renting the tap and need to get that back. The brewery doesn't want them back since they are disposable.
