Pretty sure I have been fermenting at way too high of a temp. Some of my beers have had a butter scotch taste. What should be a good ambient temp to keep my beer within the limits?
We brewed our first stout... This is 12 hours later. We checked on it after 3 and it was hissing like some kind of animal. I just knew it was bad news. So we rigged up a blow off and it STILL exploded!! So we cleaned it up and unclogged everything... And it did it AGAIN!! Do we need to do...
So we brewed a Citra Pale Ale and it just so happened that it was our first beer to keg. We poured- literally 2 oz and it just stopped....... As if there was no beer to be had. We're wondering if something is clogged (this brew is rather chunky).. Or if there is something else

Ok- update:
We wanted to check the consistency of the yeasty smell so we opened another bottle and it seems to be over-carbonated almost. It's more carbonated than soda and there's no yeasty smell in this one. This one actually tasted great though- I'm wondering about the inconsistency issue...
