I did a butcher block top and it seems to be working just fine. I think that an air tight seal is just as important as insulating with sheets of foam. An air tight seal is pretty easy to achieve with simple weather striping.

Do you mean your OG was 1.01 and not 1.1? If it was 1.01 it's because you didn't stir your wort enough before measuring, this is very common mistake for partial boils :)
