The beer will definitely be carbonated at 15psi and 40*. It should take about two weeks. You can use the table to help see how much it will be carbonated.

Morristown is right next to Whippany and has a lot of bars. I would recommend driving out to the Long Valley Brewpub. Great food and great beers. It would probably be about 35-45min from you, but a nice drive. Good luck

I placed an order on 12/23 and didn't get delivered until 1/2 because of the holidays. Its been about 15*F here. I let the yeast get to room temperature then activated it and it seemed fine since the packet swelled up. I woke up the next morning and it was going to town in the primary.
I made this kit over Thanksgiving break, had it in the primary for a week and a half and then the secondary for a week and a half. I also added 1 pound of Vienna malt and 1 pound of carapils to the kit. I then force carbonated it and tasted it 3 days later.
